Bamboo and Spare Ribs Soup Recipe

Chinese bamboo and pork chop soup

This simple Chinese three-ingredient soup is a traditional homestyle favourite in Taiwan. All you need is bamboo shoots, spare ribs and chicken stock.

Serves 4

Ingredients
300 g (11 oz) fresh bamboo shoots, cut into small chunks
*250 g (9 oz) spare ribs, chopped into 5 cm (2″) pieces

5 cups water 

1 cup of chicken stock

Method

  1. *Parboil bamboo. Place bamboo in a pot with plenty of water, bring to boil, simmer uncovered for 20 minutes. Taste bamboo; if bitter, replace water and simmer for a further 10 minutes. Drain water
  2. In another pot, blanch pork to clean and remove any fatty odour. Drain.
  3. To the pot with the bamboo, add 5 cups of water, and the stock, bring to boil.
  4. Add pork and simmer for 15 minutes. 
  5. Salt to taste.

Notes
This dish is preferably made from fresh, raw shoots. *If you cannot source the fresh bamboo shoots, use canned, but as these are normally pre-cooked, the flavour will be weaker. In this case, skip step 1 as there is no need to parboil the bamboo shoots.

If you use other preserved shoots, rinse them before use, as they may be very salty or sour.
